Soups are very healthy and nutritious liquid food that may be served hot, warm or cool and they are made from many ingredients such as vegetables, chicken, meat and water. Soup can be cooked by boiling some solids ingredients in water or any other liquids in the pot until the flavours are extracted and forming a broth.
There are many different kinds of soup recipes available and you can easily make them in the comfort of your own home. These include vegetarian varieties, chowder recipes, meat and chicken varieties. Soups are classified into Clear and Thick soups.
Here are some low calorie soup recipes that will help you lose weight:
- Potato and Leek Soup:
Ingredients: 5 diced potatoes, 1 chopped leek, 2 tablespoons of chopped parsley, 1 tablespoon olive oil and 500 ml vegetable stock.
Directions: Heat olive oil in the sauce pan and then add the chopped leek. Add the diced potatoes after few minutes and let it cook for half an hour on a low heat. Add vegetable stock and mix everything together well. Simmer until it thickens. When the soup cools down, blend until it’s smooth and then pour into a bowl, ready to eat.
- Cabbage Soup:
Ingredients: Half cabbage, 2 tablespoon chopped parsley, 2 diced carrots, 1 tin of diced tomatoes, 4 sliced onions, 1 bunch celery, cooking spray, garlic powder, 1 cut green bell pepper, salt, water.
Directions: Splash cooking spray in pot. Then sauté the green onions for a bit. Add green bell pepper, cabbage, celery and carrots. Add water after few minutes and cover. Leave to cook on low heat for some time and season with salt and pepper together with the chopped parsley. You may add mushrooms and spicy if you so wish.
- Carrot Soup:
Ingredients: 6 chopped carrots, 10 grams root ginger, 1 tablespoon olive oil, 1 tablespoon basil, 1 cube of vegetable stock, salt, pepper and 3 cups of water.
Directions: Heat oil in a saucepan and then add carrot, ginger and onion. Cook onion until is soft then add vegetable stock and water. Boil all together for half an hour. Season with salt, pepper and then blend all in the mixer with water if required. Garnish your soup with basil and ready to eat.
- Chicken Lemon Soup:
Ingredients: 80 grams cubed boneless chicken breast, 1 grated celery, 4 finely chopped shallots, 1 grated carrots, 2 lemons, 800 ml chicken stock, 2 tablespoon olive oil, pepper and salt.
Directions: Heat oil in a saucepan and then add celery, carrots and shallots together with chicken cubes. Cook all for a while and stir intermittently. Add the lemon juice, sprinkle salt and pepper letting it simmers for about 45 minutes.
- Tomato Soup:
Ingredients: 6 cups of chopped fresh tomatoes, 2 tablespoon flour, 2 tablespoon butter, 1 onion, 1 quart of chicken or vegetable broth, 3 cloves garlic, salt and pepper to taste, sugar, vinegar and chopped basil.
Direction: Put tomatoes, garlic, onions, and broth in a big pot. Boil in medium heat and allow simmering for 20 minutes until the tomatoes, onions and garlic are all soft. Add salt and pepper to taste. Allow to cool and then blend all together until it’s smooth. Heat your butter in another pot and then add flour and whisk until it turns brown. Add salt and pepper and then pour out the tomato puree soup into the mix. Add vinegar and sugar and then heat until it thickens. Serve with chopped fresh basil.
